What is your favorite outdoor activity? My favorite outdoor activity is sitting around a fire cooking marshmallows with family members particularly my grandchildren.
In a car would you rather drive or be a passenger? I use to love to drive but now I like being passenger and read books, it is less stressful.
If you could have three wishes granted for you alone, what would they be?
My first wish would be to have a mother / daughter relationship with my daughter.
My second wish is to travel and visit some of my girl friends and treat them to dinner and enjoy each others company.
My third wish is to be more spiritual and be in tune with Heavenly Father.
What inspired you or what did you appreciate this past week? I actually have photo this week. I am in charge of an Art Show we have this yearly at our library where I work. I am the Art Coordinator. We are going on our 8th year. I actually made a collage- I was inspired by my parents wedding day – they were in this cool car and I have always liked the color of it and the window. I think it is 1940 DeSoto. My parents teenage years were during the 1940’s. My dad met mom at a skating roller rink. They were married in April 1950 I went on line to see what was going on during that era and this is what I came up with . They are still living and mom turned 91 in June and Dad will turn 91 on Oct. 31, yes he is Halloween baby. Mom used to like to jitterbug and dance around the house. This is honoring them.
Friday is pizza night at our house. I usually get the dough out from the freezer and set it out till I leave for work in the morning.. Then it goes back into the refrigerator. When hubby comes home he pulls it out until I come home.
I rolled out my dough on the counter with flour underneath it, I rolled it till it was about 16 inch to fit on my round pizza pan.. Then instead of spraying my pan, I decided to try putting flour on instead. Then layed out my dough so I could dress it. My husband likes anchovies fillets and I like to keep his side separate from mine as I don’t care for them at all. Last week one got on my side and it was yuck. After my dough is on the pan, I spray it with olive oil on the dough, sprinkle some Italian Seasonings on top. then I laid out hubby pepperoni.on his side of the pizza.
So tonight I tried something different. I cut very thin rings of onions and sauteed them in olive oil in a black cast iron pan to they were soft, lightly browned, continuing to turn them over so they would not burn on one side. Then I added some sliced button mushrooms and sauteed them and added some garlic and stirred a few more minutes and divided them between the pizzas.
This is my side of the pizza –, his pizza is lined with pepperoni all the ways around so I could keep his toppings inside of that therefore and hopefully I would not run into one his anchovy fillets.
then we cook our pizza for 8 minutes with out the cheese on it in a 425 degree oven in the middle shelf. When it comes out we cover it first with mozzarella cheese that we shred ourselves. I like to use a salad shooter as it is less work.
Then I like to sprinkle on the parmesan cheese. Everytime I use this I think about my mom. She told me when she was little girl her father would take her and her sister down to see his mother, she was 100% Italian Grandmother. Her father would buy piece of parmesan cheese to take and give to his mother. Since that time she told me, I quit using the process parmesan cheese and like to buy the real cheese myself.
By the way if you ever visit Wisconsin they are known for their cheese. So now when I go up there I usually get two chucks parmesan cheese and it will last me all year long. as you can see I didn’t cover the edges where the pepperoni was as I wanted to know how to cut this when it coves out of the oven.. Then after putting the two cheeses on , I put it back in for 7-8 minutes to melt the cheese over the pizza. Don’t forget to spriggle Italian Seasonings mixture over this. You can buy it already made at Dollar Tree or grocery store will carry this as well. Or buy it from natural food store. Come to think of it I did buy mine from Austin Parker a natural food store where one can buy it by the ounce. .Then I poured it into the container I had at home. This is my finished product.

Most of the time I didn’t read them as they seem to be more focused on young children’s lunches. My children were grown but I was interested in her concept. Then right after Christmas she had offer that in 6 weeks you could get yourself off of process food. I wasn’t sure about all that was involved, but the price was inviting, I had thought about going back to Weight Watches but there prices were screaming at me and my pocket book could not wrap around the cost. So I decided to settle with this 6 week course from Lisa Leake. My legs were paining me and I wanted to eat better so I could serve the Lord better. So that is the reason I decided to try this course.
I learn things I had not even consider process before. Some of the ingredients has always baffled me not knowing why they were in there and why. So I learned some new things and started following the course. Each week she gave you something to work on. I have lost 10 pounds from following her course. Then I started walking and lost 10 more pounds. I seem to be able to keep it off. I haven’t walked lately due to my siatic nerve and back pain but as soon as I can I am going to get back into it again. I feel better. I have been able to get back into my smaller size clothes. I have more energy. I really recommend this way of eating. I don’t even count calories, I just make sure I eat my fruit and vegetables and occasional meat. I am not a big meat fan to begin with. I am more conscious as to what not to pick up. I stay out of fast food resturants.
I had some teeth work done recently and that really curved me away from white sugar which was another thing that helped me loose my weight.
I hope this helps someone that is wanting to lose weight and learn new things about the food culture out there. I am always searching for new homemade cooking ideas now. My board on pinterest called Recipes to try has some great ideas that I have used.
Some years back I met someone that wanted to preserve their family recipes that had been handed down. They were also gathering favorite recipes their children grew up with so they would not be lost until one day they would appreciate them or would want them.
So I gathered up my mom’s and my grandmother that have become familiar and well loved. I included the ones I have made recently and others that my daughter loved as a kid. Now if you know me I like to be creative when I give a gift whether to family or friends. Have you ever received a gift and you liked the package better than the item?. That actually happened to me this past Christmas. But of course I would not say anything to indicate this.
I looked for a photo album that would fit 4×6 recipe cards. I didn’t want it to be to big or awkward. I wanted to make sure it would fit on shelf and not be oversized.
I found a photo album that fit my criteria. The pages had plastic sleeves that my recipe cards would fit in perfectly.
I like that idea that families that garden together stay together. Based on that concept – my daughter seems to like bird things in her house. So I decided to use that as my theme. I came up with “Birds of Feather, Bake Together”
Then I gathered all my materials and made a mixed media cover to house the recipe cards. Here is picture of what I came up with. I used tape around edges using her favorite colors blue and green. Assorted paper to make my collage, ink, rubber stamps and rub on letters and then put modge podge over the entire front and back cover. I put the date on front so she would remember when she received this.
I am really happy to report she was really excited with her gift. She loved the cover too! Bingo nice when your daughter appreciates something you made for them. She also loved this because I left room for her to add some others as time passes by. It seems- she uses the same size card I use. Like Mother like daughter. She’s my daughter. So that all in nut shell for today!
Here is funny thing that happened to me yesterday. I have two single edge razor blades in a yellow prescription bottle like the ones above except my lid is upside down so I can screw it on and off. The bottle label is kind of worn off but the back side of sticky label is stuck to the bottle and I didn’t bother to take it off. I normally use the razors to peel labels off of packages so we can send them back out for the interlibrary loan dept.
I had the prescription bottle sitting out in public view, some guy walked by and was trying to see what was in this bottle.The razor blades were actually on top of each other I am not sure how that came to be? He started to say something about his prescriptions, when I piped up with ” there’s razor blades in there so I can stay sharp, he laughed and so did my coworker and so did I. Then I thought this would be good thing to post on Friday!
I have friend who is moving away in few weeks. She is someone that comes to the library where I work. There have been many that have come and gone. Some have gone further to Heaven above.
I had this thought that I would write a little something in the beginning of her journal some personal effect of things we might have shared from time to time. But instead of using up her space, I decided to insert it in the front of the book. But then I received an inspiration, this idea popped into my head – I am going to place some of my favorite quotes amongst her pages so that when she reaches that page she will have a neat little quote to give her inspiration or or help her along her journey..
I hope this prompts someone to do the same thing. It could be a college student, or dear friend. either way I think it was neat idea. to send someone along their way….
